This is a recipe Sophia’s grandma, Crystal sent me. It was easy to make and came out great. Plus, it’s always nice to have leftovers you can heat up another night you don’t feel up to cooking. This recipe serves 4 people.
What You Will Need
1. 2 whole chicken breasts
2. 2 bags of frozen broccoli
3. 1 can cream of chicken soup (I used the 98%fat free for a lighter version)
4. 1/2 cup of mayonaise (I used light)
5. 1 tsp lemon juice
6. 1/2 tsp curry powder
7. 1 cup of shredded cheese
Steps
Cook Chicken- remove skin and bones and cut up
Cook broccoli, drain and put in bottom of 9 inch casserole dish
Place chicken over broccoli
Mix soup, mayonaise, lemon juice, and curry powder
Pour over top of chicken
Sprinkle cheese over the top
Cover with foil and bake at 375 for 30 minutes
Oh I think this can have this with this diet/menu as a substitute! BUT portioned out ofcourse! A must print!~Thanks…
